What we do

Dark kitchen plumbing and delivery kitchen fit-outs in London

Dark kitchen plumbing has to cope with change. A unit might launch as a burger brand, add a second menu within months, then be stripped back for a different operator. Ninja Plumbers works with delivery-only and virtual-brand kitchens, ghost kitchens in shared sites, converted units and containers, and caterers running from commercial premises throughout London and the Surrey towns we cover. We fit hand-wash basins, prep and pot-wash sinks, dishwashers and glasswashers, connect under-sink grease traps, clear drains blocked with fat and food waste, and move points when the layout changes. Our registered electricians add the sockets and circuits new equipment needs, so the whole job stays with one team.

What premises like yours need

What do dark kitchens need from their plumbing, heating and electrics?

  • Basins kept just for hands

The food hygiene rules expect a basin used only for washing hands, with running hot and cold water, and in most kitchens it has to be kept apart from the sinks where ingredients and equipment are cleaned. In a narrow unit or a container, finding room for it is the hard part. We fit compact basins at the stations where staff actually need them, add a small water heater where the main supply is too far away, and route each waste so it cannot back up.

  • Pot wash, prep sinks and hot water demand

Delivery kitchens run long services with constant washing of pans, gastronorm trays and containers. A double-bowl pot-wash sink, a separate prep sink and a dishwasher or pass-through machine can all draw hot water together. If the heater or cylinder is too small, the water goes lukewarm mid-shift and trays pile up. We look at what runs at the same time and how long the heaviest washing lasts, then advise on more storage, a larger unit or an extra point-of-use heater.

  • Fats, oils and grease

Fats, oils and grease must not go down the drain. In a kitchen cooking several menus, grease still reaches the waste from pans, trays and rinsing, and it sets hard further along the pipe. An under-sink grease trap can hold back some of that grease upstream of your drains, provided it is sized sensibly and emptied often. We fit and connect these traps. Large below-ground grease separators are emptied by specialist waste contractors, not by us, and used oil should go to a licensed collector.

  • Kitchens that get rearranged

Menus and brands change often in delivery kitchens, and each change can mean a new fryer line, a second prep station or a sink that now sits in the wrong place. We move sinks and wastes, add capped water points for future equipment, and connect water feeds to combi ovens, coffee machines and drinks dispensers following each maker's instructions. Where floor gullies are needed, or have ended up hidden under new units, we make sure they stay reachable for cleaning.

Keeping FOG out of your drains

Scrape plates, pans and trays into food waste before they reach the sink, and wipe greasy trays with paper first. Never pour oil or fat down a sink, even with hot water and detergent, because it cools and hardens further along. Sink strainers catch food scraps. Check your grease trap regularly and empty it before it is full, and write down when you do. Where kitchen grease blocks a public sewer, Thames Water can take action against the business responsible, so repeated problems are worth fixing properly.

Commercial gas and where our work stops

Our Gas Safe registration covers domestic-sized boilers and appliances. Wok burners, fryers, gas combi ovens and other commercial catering gas equipment need engineers holding commercial gas qualifications, and we tell you straight when your line-up falls outside what we do. Kitchen extraction canopies and ductwork are also outside our work. What we cover is everything around that kit: water feeds, sinks, wastes, hot water, lighting and power, so you can bring in a specialist for the rest.

Planning a fit-out or a menu change

Before signing off a new layout, mark where each hand-wash basin, prep sink, pot-wash sink and dishwasher will go, and check where the drains and gullies actually run. In shared sites and converted units the waste route is often the limit, and moving a sink a short way can mean new pipework through a wall or floor. Tell us what equipment is coming and what water and power it needs. We can then fit capped points ready for later, and plan work for the hours between services.

Questions

Questions about plumbing for dark kitchens

Can you fit a grease trap in our dark kitchen?

We fit and connect under-sink grease traps to pot-wash and prep sinks, and advise on a size to suit what you cook and wash. A trap only works if it is emptied regularly. Large below-ground grease separators are a different job: they are emptied by specialist waste contractors, which we do not provide.

We are changing brands. Can you move our sinks?

Yes. We move sinks and wastes, add or remove water points, and cap off pipework you no longer need. Tell us the new layout and equipment list early, and we will say what the drains allow. Where possible, we do the work between services or on your closed day, with the price agreed first.

Can you connect our combi oven and coffee machine?

We connect the water supply and, where needed, the drain, following the manufacturer's instructions for pressure, filtration and backflow protection. Gas connections for commercial catering equipment need an engineer with commercial gas qualifications, and we will be straight with you if that applies. Our electricians can add a suitable supply for electric units.

Our drain keeps blocking. What is causing it?

In delivery kitchens the usual causes are fat and food scraps, often from rinsing containers and trays. A recurring blockage can also point to a grease trap that needs emptying more often, a badly sloped pipe or a damaged section. We clear the blockage, and if it keeps coming back, a CCTV survey shows exactly where and why.

Do you work in shared ghost kitchen sites?

Yes. We work in shared sites, converted units and containers, and liaise with the site manager about access, water shut-offs and shared drains. The engineers we send are directly employed, DBS-checked and fully insured. If a drain fails late at night, you can reach our 24/7 emergency callout.
